Thanksgiving Preview Edition

Keep Your Turkey

I can't be bothered with that

A bird is a bird, I like to say

But, oh, the pear bread stuffing is...

And the cranberry orange sauce drizzles...

And the sweet ginger yams are, well...

And the grilled citrus asparagus smells...

And the pies, oh the pies...

Apple macadamia, pumpkin souflee...

     ...What were we talking about?

You can make your bird more than just a bird:

Prior to cooking, try soaking your turkey in a bath of water and  1 lb of kosher salt overnight in a x-large ziploc bag in bottom drawer of your
fridge.  Roast the next day for the most tender delicious turkey ever.

Chef Barry's Nibble of Knowledge:

Picking the superior Pumpkin:

-  Make sure that the color is uniform.

· Look closely for any mold near the stem.

· Stems should be green and firm, not brown and soft.

- Watch out for bruises or cuts.

Halloween,

What a scene

Orange pumpkins calling me

to make a Soup

But alas I wait

Until the trick or treaters flee

And I can salvage those Jacks

For me....
